If you want to change the default background color of the TextEdit application on the Mac, you can do that by following the below steps:
- Open TextEdit App,
- Now go to Menu: Format -> Font -> Show Fonts (Shortcut Command ⌘ + T)
- On the new window click on the document color as shown in the below snapshot.

- Choose the color you want and close the window.
